Cilantro Lime Chicken

So after my horrible morning and rainy dreary day, I came home to a wonderful aroma. I told y'all that last night was my favorite dinner so far but that was until I had this cilantro lime chicken. I love Mexican inspired dishes and tonight was not a let down! I did make white rice when I got home to go with the chicken and veggies in the slow cooker. I also topped this dish with some Mexican cheese and sour cream.

Cilantro Lime Chicken 

  • 1.5 lbs Boneless, skinless chicken
  • 1/2 Onion diced
  • 1 Bell pepper diced
  • 1 Can black beans drained and rinsed
  • 1 Can corn drained
  • 1 Can Rotel (I used mild, but use what you prefer)
  • 1 Jalapeno sliced
  • Juice of 2 limes
  • 3 Cloves of garlic minced
  • 1 Cup cilantro
  • 2 Tsp Cumin
When freezing this meal put all of the above in a freezer bag. Take out the night before cooking and cook on low for 8 hours.

Chicken fell apart on its own, it was very tender, the veggies were tender and very flavorful along with the lime juice and cilantro it all made for perfect pairings. See everyone on Saturday for Roast and carrots!
