I hope everyone had a wonderful holiday weekend! I know I did. Today I made a freezer slow cooker meal that required a little more prep work than my others did. I was home today cleaning carpets so I was able to tend to this meal.
BBQ Chicken Cornbread
- 1 lb Boneless, skinless chicken breasts
- 1 Bell pepper diced
- 1 Onion diced
- 1 Cup BBQ sauce (any kind that you like, I used the BBQ sauce I make)
- 1/4 lb Sharp cheddar cheese shredded
- 1 Box Jiffy corn mix (plus ingredients to make corn mix 1/3 cup milk and 1 egg)
To make this a freezer meal add all ingredients except for the jiffy mix (and the ingredients needed to make jiffy mix). Cook on low for 4 hours, After 4 hours remove the chicken and shred with fork. Put the sauce plus the chicken into a casserole dish. In a separate bowl mix together the jiffy mix with the 1/3 cup milk and 1 egg. Add the jiffy mix to the top of the casserole, it does not have to be pretty because the jiffy mix will rise. Bake this on 350 degrees for 40 minutes.

The peppers in this were zesty, chicken was juicy, BBQ sauce was tangy, and the cornbread was sweet. Yet another successful meal...even had to fight Jake off to save some for lunch this week! We will be eating left overs tomorrow so I will see you all on Wednesday for Cheesy Sausage and Potatoes!
