BBQ Beef Soup
- 1lb Top round, sliced into 1/2 inch thick slices
- 4 Cups beef broth
- 28oz Diced tomatoes
- 12oz Light colored ale
- 1 Carrot, chopped
- 1 Sweet potato, chunked into 1/2 inch chunks
- 1/4 Cup packed brown sugar
- 1/4 Cup apple cider vinegar
- 2 Tbs Worcestershire
- 1 Tsp coriander
- 1/2 Tsp all spice
- 1/2 Tsp dry mustard
- 1/2 Tsp salt
- 1/4 Tsp cloves
- 1/4 Tsp pepper
Combine all and cook in the pressure cooker for 50 minutes. This can also be cooked on the stove until the meat is tender.
The sweet potatoes absorbed all the sweet juices from the broth and the meat was super tender.
